'Tis the Season for Giant Scallions & Drying Green Garlic |
Featuring more cabbage, beets, fennel, watermelon radishes, and solstice strawberries
Even though my husband thinks they are more fun to photograph than to eat, I’m excited to try the watermelon radishes this week. And Live Earth Farm fennel is always a treat. After my success with the Cornish hens last week, I’m defrosting the other two that I bought on sale to roast over a bed of "farewell to spring" vegetables--including the hefty fennel bulbs.
Sunday is the first Father’s Day since my Dad passed away. He loved seafood, so I thought I'd make his recipe for East Coast flounder, which he and Mom loved to catch and prepare. Sanddabs, sole, or sablefish will be our sustainably-harvested West Coast substitute. Add I'll serve up some leftover Polish beets (delicious warm or chilled) to honor Dad's heritage. And, although Dad wasn't keen on spinach, his favorite color by far was green, so I'll work out a variation of Tuscan-style Garlic Spinach with arugula, spinach, and green garlic.
I’m going to try to chocolate-dip just a few perfect strawberries this week, in honor of the Summer Solstice, and I need to start getting creative with cabbage. Any cabbage-y ideas?
