Recipe Inspired by Cuba Cocina!
It’s Memorial Day weekend, time for parades, picnics, and potables,
preferably alcoholic. Remembering my failed yet fun attempt to make frozen
daiquiris with fresh strawberries last Labor Day, I decided to give it another
shot. Using frozen strawberries instead of fresh strawberries and
ice gives the daiquiris a more concentrated strawberry hit, intensifying both flavor and texture. I reduced the
amount of rum per drink to 2 - 2.5 oz. rather than 3, since all of my photos from
Labor Day were too blurry to use after just a few sips. Use your own judgment,
or lack thereof.
serves 2
2½ cups frozen strawberries
4½ tbsp. superfine
white sugar (more if strawberries seem tart)
4 – 5 oz. light rum (or lemon-lime soda for virgins)
4 tbsp. fresh lime juice
2 tbsp. fresh lemon juice
Garnish: strawberries and/or lime slices
Optional garnish: whipped cream
Measure all ingredients first, and keep strawberries in
freezer. Add to blender: strawberries, sugar, rum, lime juice, lemon juice. Blend
till liquefied and smooth.
Pour into 2 martini glasses—a rubber scraper will help,
since the mixture will be thick. Garnish with a strawberry, lime wedge, or both.
Add a dollop of whipped cream if desired. Serve and enjoy immediately.

1 cup crushed ice
3 oz. white or light rum
½ tbsp. superfine white sugar
1 tbsp. fresh lime juice
